Ingredients

Glaze

  • 1 cup ketchup
  • ¼ cup packed brown sugar
  • tablespoons cider vinegar
  • ½ teaspoon Tobasco sauce

Meatloaf

  • 2 teaspoons vegetable or canola oil
  • 1 medium onion, chopped fine
  • 2 cloves garlic, minced
  • cup crushed saltine crackers, about 17 crackers
  • cup milk, not skim
  • 1 pound 90% lean ground beef
  • 1 pound ground pork or turkey
  • 2 large eggs
  • 1 large egg yolk
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon dried thyme
  • cup finely chopped fresh parsley
  • 1 teaspoon salt
  • ¾ teaspoon pepper

Instructions

  1. 1. Whisk the glaze ingredients in a small saucepan until the sugar dissolves, reserving ¼ cup of the mixture.
  2. 2. Simmer the remaining glaze over medium heat until slightly thickened, about 5 minutes, then keep warm.
  3. 3. Preheat the oven and line a baking sheet with foil, lightly coating it with cooking spray.
  4. 4. Heat oil in a skillet and cook the onion until golden, then add garlic and cook until fragrant.
  5. 5. Process saltines and milk until smooth, then combine with beef and pork in a large bowl.
  6. 6. Add the onion mixture, eggs, mustard, Worcestershire sauce, thyme, parsley, salt, and pepper, mixing with hands until combined.
  7. 7. Shape the meat mixture into a loaf on the baking sheet and broil until browned.
  8. 8. Brush with reserved glaze and broil again briefly.
  9. 9. Bake at 350°F until cooked through, then let rest before slicing.
