Instructions
- Prepare the glaze by mixing all ingredients in a small saucepan and simmering for 2-3 minutes until thickened.
- Preheat the oven to 350°F (175°C). Heat oil in a skillet, sauté onion and garlic until softened, then set aside to cool.
- In a large bowl, mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, hot sauce, and yogurt. Add this mixture to the meat along with crackers, parsley, and cooled onion and garlic, mixing until well blended.
- Shape the meat mixture into a loaf and place it on a foil-lined baking pan. Brush with half of the glaze and arrange bacon slices over the top.
- Bake for about 1 hour until the bacon is crisp and the internal temperature of the meatloaf reaches 160°F (70°C). Cool for 10-15 minutes before slicing and serving with extra glaze.
