Bacon Wrapped Meatloaf

Ingredients

  • pounds ground beef (90% lean)
  • 1 onion finely diced
  • 2 teaspoons garlic (minced)
  • teaspoons kosher salt
  • ½ teaspoon pepper
  • ¼ cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 eggs large
  • ¾ cup Italian style breadcrumbs
  • ½ cup ketchup (divided use)
  • 10 slices bacon
  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon olive oil
  • as needed spray cooking spray

Instructions

  1. Preheat the oven to 325°F and coat a sheet pan with cooking spray.
  2. Heat olive oil in a small pan over medium heat, add onion and cook until softened, then add garlic and cook briefly.
  3. In a large bowl, combine the cooked onion and garlic with ground beef, salt, pepper, beef broth, Worcestershire sauce, eggs, and breadcrumbs. Mix well.
  4. Shape the beef mixture into a loaf on the sheet pan and spread ¼ cup of ketchup over it.
  5. Wrap bacon slices around the loaf, tucking the ends underneath, and brush the remaining ketchup over the bacon.
  6. Bake for one hour or until the internal temperature reaches 160°F.
  7. Let the meatloaf rest for 5 minutes, sprinkle with parsley, slice, and serve.
