Bacon Wrapped Meatloaf

Ingredients

The glaze

  • ¼ cup ketchup
  • 2 tablespoons brown sugar

The meatloaf

  • 2 pounds ground beef
  • 1 small yellow onion
  • ½ one green bell pepper
  • 3 cloves garlic
  • cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ½ cup breadcrumbs
  • 2 large eggs
  • 10-12 slices bacon

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with cooking spray.
  2. In a small bowl, whisk together ketchup and brown sugar for the glaze.
  3. In a large bowl, combine ground beef, diced onion, diced bell pepper, minced garlic, milk, Worcestershire sauce, salt, pepper, breadcrumbs, and eggs until just mixed.
  4. Mold the meatloaf mixture into a loaf shape on the baking sheet.
  5. Spread the glaze evenly over the top of the meatloaf.
  6. Wrap bacon strips around the meatloaf, tucking the ends underneath.
  7. Bake in the oven for 1 hour or until the internal temperature reaches 160°F.
  8. Let the meatloaf rest for 5 minutes before slicing and serving.
