fat free saltine crackers, crushed into crumbs
Instructions
- Preheat the oven to 350°F and line a baking sheet with aluminum foil.
- In a large bowl, combine the ground beef and turkey, mixing with your hands until combined.
- Add the chopped onion, 3 tablespoons of barbecue sauce, mustard, chili powder, garlic powder, salt, black pepper, crushed saltine crackers, and egg, and mix lightly.
- Transfer the meat mixture to the baking sheet and shape it into a 9” x 5” loaf.
- Lay the strips of turkey bacon over the top of the meatloaf, overlapping them slightly, and tuck the ends underneath.
- Brush the remaining 2 tablespoons of barbecue sauce over the meatloaf.
- Bake for 50-60 minutes until the internal temperature reaches 160°F.
- Cut into 12 slices and serve.
