Bacon Wrapped BBQ Meatloaf

Ingredients

The meatloaf

  • ¾ lb 95% lean ground beef
  • ¾ lb extra lean ground turkey breast
  • ½ cup chopped onion
  • 1 large egg
  • 12 strips raw turkey bacon

The seasoning and sauce

  • 5 tablespoons barbecue sauce
  • 1 tablespoon mustard
  • 1 ½ teaspoons chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 12 crackers fat free saltine crackers, crushed into crumbs

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with aluminum foil.
  2. In a large bowl, combine the ground beef and turkey, mixing with your hands until combined.
  3. Add the chopped onion, 3 tablespoons of barbecue sauce, mustard, chili powder, garlic powder, salt, black pepper, crushed saltine crackers, and egg, and mix lightly.
  4. Transfer the meat mixture to the baking sheet and shape it into a 9” x 5” loaf.
  5. Lay the strips of turkey bacon over the top of the meatloaf, overlapping them slightly, and tuck the ends underneath.
  6. Brush the remaining 2 tablespoons of barbecue sauce over the meatloaf.
  7. Bake for 50-60 minutes until the internal temperature reaches 160°F.
  8. Cut into 12 slices and serve.
