Ingredients

The meatloaf

  • 1 cup crushed saltines
  • cup milk
  • ¼ to ½ cup minced fresh parsley
  • 2 large eggs
  • 2 teaspoons onion powder
  • 3 cloves garlic
  • 1 tablespoon Dijon mustard
  • 3 tablespoons Worcestershire sauce
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper
  • 2 pounds ground meat (beef and pork mix)

The glaze

  • cup ketchup or BBQ sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider or red wine vinegar

Instructions

  1. Combine crushed saltines and milk in a bowl and let sit for 5-10 minutes.
  2. Add parsley, eggs, onion powder, garlic, Dijon mustard, Worcestershire sauce, salt, and pepper to the mixture and mix well.
  3. Incorporate ground meat into the mixture until evenly combined.
  4. For the glaze, mix ketchup (or BBQ sauce), brown sugar, and vinegar in a separate bowl.
  5. Preheat the oven to 375°F and prepare a baking sheet with foil and cooking spray.
  6. Shape the meat mixture into a loaf and place it on the prepared pan.
  7. Spread the glaze over the meatloaf.
  8. Bake for 45-50 minutes until the internal temperature reaches 160°F.
  9. Let the meatloaf rest for 10-15 minutes before slicing and serving.
