Cashew Hummus

Ingredients

  • 1 cup raw cashews, soaked
  • 2 units lemons, juiced
  • 3 tablespoons tahini
  • 1 clove garlic, minced
  • ½ teaspoon sea salt
  • to taste unit smoked paprika (optional, for topping)

Instructions

  1. Drain the soaked cashews and place them in a food processor or high-speed blender.
  2. Add the lemon juice, tahini, garlic, and sea salt, then process until smooth and creamy.
  3. Stop to scrape down the sides of the bowl as needed during blending.
  4. For a thinner consistency, add 1-2 tablespoons of water and blend again.
  5. Transfer the hummus to a bowl and sprinkle with smoked paprika if desired.
  6. Serve immediately or chill for later.
