Ingredients

The fritters

  • 6 ears corn, shucked
  • 4 large eggs, lightly beaten
  • 4 stalks scallions, thinly sliced
  • ½ cup chopped cilantro
  • 1 cup grated sharp Cheddar cheese
  • cup all-purpose flour
  • 1-2 teaspoons kosher salt
  • freshly cracked to taste black pepper
  • olive oil or grapeseed oil for frying
  • sea salt for finishing

Optional serving suggestions

  • fresh lime
  • sour cream
  • hot sauce
  • tzatziki

Instructions

  1. Make the batter by slicing the corn kernels off the cobs and pressing out the milk into a bowl.
  2. Season the corn mixture with salt, then add eggs, scallions, cilantro, cheese, and flour, mixing well.
  3. Test the batter consistency and adjust with more egg or flour as needed.
  4. Heat oil in a skillet and fry a test fritter to check seasoning and texture.
  5. Fry the remaining fritters in batches, flattening them gently and cooking until golden brown on both sides.
  6. Serve warm with optional lime, sour cream, hot sauce, or tzatziki.
