Ingredients

The batter

  • 3 cups raw fresh corn kernels
  • 1 large egg
  • 3 tbsp corn starch
  • 3 tbsp whole wheat flour
  • 2 tbsp heavy cream
  • ½ tsp salt
  • ¼ tsp cayenne pepper
  • 1 green onion minced

For cooking

  • 3-4 tbsp extra-virgin olive oil

Optional garnish

  • to taste plain Greek yogurt or sour cream
  • to taste sliced green onions
  • to taste fresh corn kernels
  • a pinch cayenne pepper

Instructions

  1. Process half of the corn kernels, egg, corn starch, flour or cornmeal, heavy cream, salt, and cayenne in a food processor until a batter forms.
  2. Remove the blade and stir in the remaining corn kernels and green onions.
  3. Heat oil in a skillet over medium heat and drop batter by heaping tablespoons into the pan.
  4. Fry until golden on one side, about 45 seconds to 1 minute, then flip and fry the other side until golden.
  5. Transfer cooked fritters to a plate and repeat with the remaining batter, adding more oil as needed.
  6. Serve immediately with optional garnishes.
