Instructions
- Remove the husk from the corn and cut the kernels from the cob.
- Microwave the corn for about 5-7 minutes or boil it before removing from the husk.
- In a medium bowl, mix all dry ingredients including corn kernels, cornmeal, green onion, bell pepper, jalapeno, flour, minced garlic, cilantro, paprika, salt, and pepper.
- Gently pour in the milk to form a thick batter, adding more if necessary.
- Add cheese to the mixture and combine thoroughly.
- Heat oil in a large nonstick skillet over medium heat.
- Drop about ¼-1/3 cup of batter onto the skillet, flattening it slightly.
- Fry until golden brown, about 3-4 minutes per side.
- Drain on paper towels and serve warm with cilantro dressing.
- For the dip, pulse or mash all dip ingredients and adjust thickness with water or oil.
