Ingredients

The fritters

  • 2 cups sweet corn kernels
  • ¼ cup cornmeal
  • 1 piece green onion or scallion
  • ¼ cup diced green bell pepper
  • ½ small Jalapeno pepper
  • ½ cup all-purpose flour
  • 1 teaspoon minced garlic
  • 1 tablespoon chopped cilantro
  • ½ teaspoon smoked paprika
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½-1 cup milk
  • ½-1 cup cheese

Cilantro Avocado dip

  • ½ medium avocado
  • ¼ cup low fat sour cream
  • ½ cup cilantro leaves
  • ½ teaspoon minced garlic
  • to taste salt and lime

Instructions

  1. Remove the husk from the corn and cut the kernels from the cob.
  2. Microwave the corn for about 5-7 minutes or boil it before removing from the husk.
  3. In a medium bowl, mix all dry ingredients including corn kernels, cornmeal, green onion, bell pepper, jalapeno, flour, minced garlic, cilantro, paprika, salt, and pepper.
  4. Gently pour in the milk to form a thick batter, adding more if necessary.
  5. Add cheese to the mixture and combine thoroughly.
  6. Heat oil in a large nonstick skillet over medium heat.
  7. Drop about ¼-1/3 cup of batter onto the skillet, flattening it slightly.
  8. Fry until golden brown, about 3-4 minutes per side.
  9. Drain on paper towels and serve warm with cilantro dressing.
  10. For the dip, pulse or mash all dip ingredients and adjust thickness with water or oil.
