Instructions
- Combine corn kernels, flour, sugar, baking powder, salt, and pepper in a large bowl.
- Add eggs and milk, stirring until a thick batter forms.
- Mix in green onions and cheddar cheese gently.
- Heat ½ inch of oil in a deep pan over medium-high heat.
- Drop 2 tablespoon-sized mounds of batter into the pan and flatten them.
- Cook each fritter for about 3 minutes per side until golden brown and crispy.
- Repeat with remaining batter.
- Add optional toppings if desired and serve immediately.
