Ingredients

The fritters

  • 3 cups corn kernels
  • 1 cup all purpose flour
  • 1 teaspoon granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • ½ cup whole milk
  • cup green onions
  • ½ cup shredded cheddar cheese
  • as needed none vegetable oil for frying

Optional toppings

  • as needed none sour cream
  • as needed none sliced green onions
  • as needed none crumbled bacon

Instructions

  1. Combine corn kernels, flour, sugar, baking powder, salt, and pepper in a large bowl.
  2. Add eggs and milk, stirring until a thick batter forms.
  3. Mix in green onions and cheddar cheese gently.
  4. Heat ½ inch of oil in a deep pan over medium-high heat.
  5. Drop 2 tablespoon-sized mounds of batter into the pan and flatten them.
  6. Cook each fritter for about 3 minutes per side until golden brown and crispy.
  7. Repeat with remaining batter.
  8. Add optional toppings if desired and serve immediately.
