Instructions
- Sift together the flour, baking powder, salt, and sugar.
- Combine the eggs, milk, and melted butter, then add in the corn, red pepper, cilantro, and spring onions.
- Fold the flour mixture into the wet ingredients until just combined.
- Drop tablespoonfuls of the mixture into hot oil (about ½ inch deep) in a sauté pan.
- Sauté for about 90 seconds until golden brown, then flip and cook the other side until golden.
- Serve immediately or cool and reheat in a 350°F oven for 10 minutes before serving.
