Ingredients

  • 2 ears roasted corn off the cob
  • 1 Tablespoon chopped cilantro
  • ¼ cup red pepper, diced
  • ¼ cup spring onions, chopped
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 Tablespoons sugar
  • 2 eggs lightly beaten
  • ½ cup milk
  • ¼ cup melted butter

Instructions

  1. Sift together the flour, baking powder, salt, and sugar.
  2. Combine the eggs, milk, and melted butter, then add in the corn, red pepper, cilantro, and spring onions.
  3. Fold the flour mixture into the wet ingredients until just combined.
  4. Drop tablespoonfuls of the mixture into hot oil (about ½ inch deep) in a sauté pan.
  5. Sauté for about 90 seconds until golden brown, then flip and cook the other side until golden.
  6. Serve immediately or cool and reheat in a 350°F oven for 10 minutes before serving.
