Instructions
- Whisk together the milk and egg in a large bowl.
- Add corn, scallions, cheese, and apple cider vinegar; stir to combine.
- Sprinkle in salt, onion powder, baking powder, garlic powder, cayenne, smoked paprika, and black pepper; stir again.
- Sprinkle cornmeal and flour over the mixture; stir until well combined.
- Heat a cast-iron skillet over medium heat and coat with oil.
- Scoop ¼ cup of batter into the pan for each fritter, flattening them into disks.
- Cook for 2 to 3 minutes per side until golden brown and cooked through.
- Repeat with remaining batter, adding more oil as needed.
- Garnish with chopped scallions and serve with sour cream.
