Ingredients

The batter

  • 6 tablespoons milk
  • 1 large egg
  • 2 cups corn kernels
  • ¾ cup chopped scallions
  • 1 cup grated sharp cheddar cheese
  • 1 teaspoon apple cider vinegar
  • teaspoons sea salt
  • 1 teaspoon onion powder
  • ½ teaspoon baking powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon smoked paprika
  • black pepper to taste freshly ground black pepper
  • ¾ cup cornmeal
  • ½ cup all-purpose flour
  • as needed tablespoons neutral oil

For serving

  • as needed tablespoons sour cream

Instructions

  1. Whisk together the milk and egg in a large bowl.
  2. Add corn, scallions, cheese, and apple cider vinegar; stir to combine.
  3. Sprinkle in salt, onion powder, baking powder, garlic powder, cayenne, smoked paprika, and black pepper; stir again.
  4. Sprinkle cornmeal and flour over the mixture; stir until well combined.
  5. Heat a cast-iron skillet over medium heat and coat with oil.
  6. Scoop ¼ cup of batter into the pan for each fritter, flattening them into disks.
  7. Cook for 2 to 3 minutes per side until golden brown and cooked through.
  8. Repeat with remaining batter, adding more oil as needed.
  9. Garnish with chopped scallions and serve with sour cream.
