Ingredients

  • 1 cup white whole wheat flour
  • 1 teaspoon baking powder
  • tablespoons garlic powder
  • 1 teaspoon salt
  • ½ teaspoon ground pepper
  • 3 tablespoons canned jalapeños, chopped
  • 3 cups sweet corn
  • ¼ cup minced chives
  • ¾ cup unsweetened almond milk
  • 2 large eggs
  • ¼ cup olive oil, divided

Instructions

  1. Mix the dry ingredients in a bowl until combined.
  2. Add the corn, chives, almond milk, and 1 tablespoon of olive oil to the dry ingredients and mix well.
  3. Whisk in the eggs until the batter is thick.
  4. Heat a cast iron skillet over medium heat and add 1 tablespoon of olive oil.
  5. Scoop the batter into the skillet using a ¼ cup measuring cup and shape it into a circle.
  6. Cook each fritter for 2-3 minutes on each side until golden brown.
  7. Remove the fritters and sprinkle with additional salt.
  8. Repeat the process, adding more olive oil as needed, and serve with Greek yogurt and chives.
