Corn Fritters

Instructions
- Mix the dry ingredients in a bowl until combined.
- Add the corn, chives, almond milk, and 1 tablespoon of olive oil to the dry ingredients and mix well.
- Whisk in the eggs until the batter is thick.
- Heat a cast iron skillet over medium heat and add 1 tablespoon of olive oil.
- Scoop the batter into the skillet using a ¼ cup measuring cup and shape it into a circle.
- Cook each fritter for 2-3 minutes on each side until golden brown.
- Remove the fritters and sprinkle with additional salt.
- Repeat the process, adding more olive oil as needed, and serve with Greek yogurt and chives.
