Ingredients

  • Tbsp I Can't Believe It's Not Butter
  • 3 medium apples, cored and diced into ½-inch cubes
  • ¾ cup apple juice
  • tsp ground cinnamon, divided
  • ¼ tsp ground nutmeg, divided
  • 2 cups plain Greek yogurt
  • Tbsp honey
  • cups honey granola

Instructions

  1. Melt the I Can't Believe It's Not Butter in a skillet over medium heat.
  2. Add the diced apples and sauté for 5 minutes.
  3. Pour in the apple juice, ¾ tsp of cinnamon, and ⅛ tsp of nutmeg, then bring to a simmer.
  4. Reduce heat to medium-low and let it simmer until the juice thickens and coats the apples, about 10 to 15 minutes.
  5. Let the apple mixture cool completely, optionally chilling in the freezer for 15 minutes.
  6. In a mixing bowl, combine the Greek yogurt, remaining ½ tsp cinnamon, ⅛ tsp nutmeg, and honey.
  7. Divide half of the yogurt mixture among 4 cups.
  8. Layer half of the apple mixture over the yogurt, followed by half of the granola.
  9. Repeat the layering process once more.
  10. Serve immediately for best results.
