Ingredients

Oat Crumble

  • 1 cup rolled oats
  • 1 ½ tablespoons coconut oil
  • 2 teaspoons coconut palm sugar
  • 1 teaspoon ground cinnamon

Cinnamon Apples

  • 4 granny smith apples
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 tablespoon coconut palm sugar
  • 1 cup water

Yogurt

  • 2 cups vanilla Greek yogurt

Quinoa

  • 1 cup quinoa

Instructions

  1. Cook the apples with all ingredients in a saucepan until softened.
  2. Let the apple mixture cool and refrigerate for at least 1 hour.
  3. Preheat the oven and bake the oat crumble ingredients until golden brown.
  4. Cook the quinoa according to package directions and mix with cinnamon.
  5. Layer the parfait by spooning yogurt, quinoa, and cinnamon apples in a glass, repeating the layers and topping with oat crumble.
