Instructions
- Preheat the oven to 350°F.
- Place the apples in a baking dish with a lid.
- Stuff the apples with lemon rind, currants, vanilla bean, and cinnamon sticks.
- Drizzle lemon juice over the apples.
- Scatter any remaining currants around the apples.
- Cover and bake for 60 to 75 minutes.
- Serve warm.
