Ingredients

The apples

  • 4 medium apples, cored

The filling

  • 4 thin strips lemon rind
  • ½ cup dried currants or dried cherries
  • 1 whole vanilla bean, cut into 4 pieces
  • 4 pieces cinnamon sticks
  • ¼ cup lemon juice

Instructions

  1. Preheat the oven to 350°F.
  2. Place the apples in a baking dish with a lid.
  3. Stuff the apples with lemon rind, currants, vanilla bean, and cinnamon sticks.
  4. Drizzle lemon juice over the apples.
  5. Scatter any remaining currants around the apples.
  6. Cover and bake for 60 to 75 minutes.
  7. Serve warm.
