Vegan Lavender Almond Cookies

Ingredients

  • ½ cup aquafaba
  • ¾ cup organic cane sugar
  • ¾ cup dairy-free margarine
  • 1 teaspoon pure vanilla extract
  • ¾ cup almond flour or meal
  • 1 ½ cups enriched, unbleached wheat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt (optional)
  • 2 tablespoons dried lavender flowers
  • ¼ cup chopped almonds

Instructions

  1. Preheat the oven to 350°F.
  2. Whip the aquafaba and sugar in a large bowl until soft peaks form.
  3. Gently fold in the margarine and vanilla until smooth.
  4. In a separate bowl, mix the almond flour, wheat flour, baking powder, salt, lavender flowers, and chopped almonds.
  5. Fold the dry ingredients into the aquafaba mixture until well combined.
  6. Spray baking sheets with nonstick spray and drop spoonfuls of the batter onto the sheets.
  7. Bake for about 18-20 minutes until firm and golden along the edges.
  8. Remove from the oven and let cool.
