Ingredients

The yogurt

  • 1 quart milk (whole, raw, goat's, or sheep's)
  • 1 tablespoon plain yogurt with active live cultures

Equipment

  • 1 unit strainer
  • 1 unit cheesecloth
  • 1 unit thermometer

Optional thickening agent

  • ½ cup milk powder

Instructions

  1. Preheat the oven to the lowest setting for 10 minutes, then turn it off but leave the light on.
  2. Heat the milk in a saucepan over medium heat to 180°F, stirring often.
  3. Let the milk cool to between 110°F and 115°F.
  4. Add 1 tablespoon of yogurt to the cooled milk and whisk to combine.
  5. Pour the mixture into a clean jar, cover it, and wrap it in a towel, then place it in the oven with the light on to maintain a steady temperature of 100°F to 110°F for 6-8 hours.
  6. After 6-8 hours, strain the yogurt using cheesecloth over a strainer to thicken it if desired.
  7. Spoon the yogurt into a clean container, whisk until smooth, cover, and refrigerate.
