Instructions
- Preheat the oven to the lowest setting for 10 minutes, then turn it off but leave the light on.
- Heat the milk in a saucepan over medium heat to 180°F, stirring often.
- Let the milk cool to between 110°F and 115°F.
- Add 1 tablespoon of yogurt to the cooled milk and whisk to combine.
- Pour the mixture into a clean jar, cover it, and wrap it in a towel, then place it in the oven with the light on to maintain a steady temperature of 100°F to 110°F for 6-8 hours.
- After 6-8 hours, strain the yogurt using cheesecloth over a strainer to thicken it if desired.
- Spoon the yogurt into a clean container, whisk until smooth, cover, and refrigerate.
