Ingredients

The yogurt

  • 1/3 cup plain full fat Greek yogurt

The milk

  • 4 cups whole milk

The equipment

  • 4-5 pieces cheesecloth

Instructions

  1. Add 1/3 cup of plain Greek yogurt to a small bowl and set aside.
  2. In a medium pot, heat the milk on medium-high, stirring frequently until it reaches 180°F, then remove from heat.
  3. Let the milk cool to 115°F, stirring occasionally.
  4. Once cooled, scoop out 1/2 cup of the milk and mix it with the Greek yogurt until combined, then return this mixture to the pot and stir well.
  5. Cover the bowl with cling wrap and wrap it with a warm towel, placing it on a baking sheet.
  6. Preheat the oven to 150°F for 5 minutes, then turn it off. Place the towel-wrapped bowl in the oven with the light on for 8 to 12 hours.
  7. After resting, refrigerate the yogurt for about 2 hours until cold.
  8. Set a large strainer over a bowl, line it with cheesecloth, and pour the yogurt into it. Cover and refrigerate for at least 4 hours or overnight for desired thickness.
