Instructions
- Add 1/3 cup of plain Greek yogurt to a small bowl and set aside.
- In a medium pot, heat the milk on medium-high, stirring frequently until it reaches 180°F, then remove from heat.
- Let the milk cool to 115°F, stirring occasionally.
- Once cooled, scoop out 1/2 cup of the milk and mix it with the Greek yogurt until combined, then return this mixture to the pot and stir well.
- Cover the bowl with cling wrap and wrap it with a warm towel, placing it on a baking sheet.
- Preheat the oven to 150°F for 5 minutes, then turn it off. Place the towel-wrapped bowl in the oven with the light on for 8 to 12 hours.
- After resting, refrigerate the yogurt for about 2 hours until cold.
- Set a large strainer over a bowl, line it with cheesecloth, and pour the yogurt into it. Cover and refrigerate for at least 4 hours or overnight for desired thickness.
