Ingredients

  • 2 lbs red skin or gold potatoes
  • 2 tbs olive oil
  • 2 tbs mixed fresh herbs (thyme, chives, rosemary, parsley, etc.)
  • to taste salt

Instructions

  1. Preheat the oven to 400 degrees.
  2. Scrub the potatoes and peel them if desired.
  3. Cut the potatoes into uniform strips, about 3 inches long and ½ inch thick.
  4. Place the potatoes in a large bowl and drizzle with olive oil, mixing to coat evenly.
  5. Transfer the potatoes to a baking sheet and sprinkle generously with salt and herbs.
  6. Bake for 7 minutes, then carefully flip the potatoes and bake for another 7 minutes.
  7. Check if the fries are tender; if not, bake for a few more minutes, checking regularly.
  8. Serve immediately or cool and store in an airtight container in the refrigerator.
