Ingredients

Dough

  • 2 tablespoons agave
  • 2 ¼ teaspoons active dry yeast
  • 1 ¼ cups warm water
  • 2 tablespoons olive oil
  • 1 ½ teaspoons salt
  • 3-4 cups flour

Boiling and Topping

  • cup baking soda
  • ½ cup melted vegan butter
  • 2 tablespoons kosher salt

Instructions

  1. Activate the yeast by whisking together agave, yeast, and warm water, then let it sit for 5 minutes until foamy.
  2. Mix in olive oil and salt, then gradually add flour until the dough is no longer sticky.
  3. Knead the dough on a floured surface until smooth.
  4. Place the dough in an oiled bowl, cover, and let it rise for about 1 hour and 15 minutes until doubled.
  5. Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
  6. Boil water in a pot and add baking soda.
  7. Divide the dough into 8 portions, shape into pretzels, and boil each for 30 seconds on each side.
  8. Transfer boiled pretzels to the baking sheet, brush with vegan butter, sprinkle with salt, and bake for 15 minutes until golden.
