Instructions
- Activate the yeast by whisking agave, yeast, and warm water in a bowl and letting it sit for 5 minutes until foamy.
- Mix olive oil and salt into the yeast mixture, then gradually stir in flour until the dough is no longer sticky.
- Knead the dough gently on a floured surface until smooth.
- Place the dough in an oiled bowl, cover it, and let it rise for about 1 hour and 15 minutes until doubled.
- Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
- Boil water in a large pot, adding baking soda once boiling.
- Divide the dough into 8 portions, roll into snakes, and cut into bite-sized pieces.
- Boil the pretzel bites in batches, 10 seconds on one side and 5 seconds on the other.
- Transfer boiled bites to the baking sheet, brush with vegan butter, sprinkle with kosher salt, and bake for 15 minutes until golden.
