Ingredients

The dough

  • 2 tablespoons agave
  • 2 ¼ teaspoons active dry yeast
  • 1 ¼ cups warm water
  • 2 tablespoons olive oil
  • 1 ½ teaspoons salt
  • 3-4 cups flour

For boiling and baking

  • cup baking soda
  • ½ cup melted vegan butter
  • 2 tablespoons kosher salt

Instructions

  1. Activate the yeast by whisking agave, yeast, and warm water in a bowl and letting it sit for 5 minutes until foamy.
  2. Mix olive oil and salt into the yeast mixture, then gradually stir in flour until the dough is no longer sticky.
  3. Knead the dough gently on a floured surface until smooth.
  4. Place the dough in an oiled bowl, cover it, and let it rise for about 1 hour and 15 minutes until doubled.
  5. Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
  6. Boil water in a large pot, adding baking soda once boiling.
  7. Divide the dough into 8 portions, roll into snakes, and cut into bite-sized pieces.
  8. Boil the pretzel bites in batches, 10 seconds on one side and 5 seconds on the other.
  9. Transfer boiled bites to the baking sheet, brush with vegan butter, sprinkle with kosher salt, and bake for 15 minutes until golden.
