Instructions
- Grease a large bowl with vegetable oil and set aside.
- Mix flour and salt in a large bowl, creating a well in the center.
- Combine water, yeast, and brown sugar in a medium bowl, let sit for 5 minutes, then pour into the flour mixture along with melted butter and knead to form a dough.
- Transfer the dough to a floured surface, knead for 3-4 minutes, then place in the greased bowl, cover, and let rise for 1 hour.
- Preheat the oven to 425°F and prepare baking trays with parchment paper.
- Boil 12 cups of water in a large pot.
- Slowly add baking soda to the boiling water, reducing heat slightly.
- Once the dough has risen, divide it into quarters, roll each into a rope, and cut into 1-inch pieces.
- Bring the baking soda water back to a boil and add pretzel bites in batches, boiling for 20-30 seconds.
- Remove bites with a slotted spoon and place on baking trays, ensuring they are not touching.
- Whisk the egg and brush it on the pretzel bites, then sprinkle with sesame seeds and flaky salt.
- Bake for 18 minutes until golden brown.
- Serve warm with grainy mustard, butter, or Vegan Queso.
