Ingredients

Dough

  • ½ cup all-purpose flour
  • tsp salt
  • 2 tbsp brown sugar
  • tsp rapid rise yeast
  • cups warm water
  • 6 tbsp vegan butter, melted

Boiling Solution

  • 12 cups water
  • cup baking soda

Topping

  • 1 vegan egg Bob's Red Mill mixture or regular egg if not vegan
  • to taste sesame seeds
  • to taste flaky salt

Instructions

  1. Grease a large bowl with vegetable oil and set aside.
  2. Mix flour and salt in a large bowl, creating a well in the center.
  3. Combine water, yeast, and brown sugar in a medium bowl, let sit for 5 minutes, then pour into the flour mixture along with melted butter and knead to form a dough.
  4. Transfer the dough to a floured surface, knead for 3-4 minutes, then place in the greased bowl, cover, and let rise for 1 hour.
  5. Preheat the oven to 425°F and prepare baking trays with parchment paper.
  6. Boil 12 cups of water in a large pot.
  7. Slowly add baking soda to the boiling water, reducing heat slightly.
  8. Once the dough has risen, divide it into quarters, roll each into a rope, and cut into 1-inch pieces.
  9. Bring the baking soda water back to a boil and add pretzel bites in batches, boiling for 20-30 seconds.
  10. Remove bites with a slotted spoon and place on baking trays, ensuring they are not touching.
  11. Whisk the egg and brush it on the pretzel bites, then sprinkle with sesame seeds and flaky salt.
  12. Bake for 18 minutes until golden brown.
  13. Serve warm with grainy mustard, butter, or Vegan Queso.
