Ingredients

Marinade

  • ½ teaspoon nutmeg
  • 1 teaspoon thyme
  • ½ teaspoon cumin
  • 1 teaspoon all spice
  • 1 teaspoon white pepper
  • 1 teaspoon freshly ground pepper
  • 1 teaspoon pepper flakes
  • 1 teaspoon dried oregano
  • 2 tablespoons soy sauce
  • 1 tablespoon minced garlic

Kebab

  • 2 pounds beef Sirloin, New York Steak, or Ribeye
  • 3 tablespoons extra-virgin olive oil
  • 1 large white or red onion
  • 2 bell peppers red and green

Quick Couscous

  • 2 cups couscous
  • 1-2 tablespoons butter or olive oil
  • 1 cup corn
  • 1 cup bell pepper
  • 1 teaspoon salt
  • 3 cups broth or water

Instructions

  1. Combine marinade ingredients in a bowl and coat the beef chunks evenly.
  2. Cover the beef and let it marinate for at least 2 hours or overnight.
  3. Preheat the grill to medium high heat.
  4. Thread the beef, onion, and bell pepper onto skewers, separating beef from vegetables for even cooking.
  5. Grill for 8-10 minutes until meat is cooked to desired doneness.
  6. In a saucepan, bring broth or water, butter, salt, and vegetables to a boil.
  7. Stir in couscous, turn off heat, cover, and let steam for 5 minutes before fluffing with a fork.
