Lemon-Ginger Coconut Date Balls

Ingredients

  • 2 whole lemons (zest)
  • cup unsweetened shredded coconut
  • ¾ tsp sea salt
  • 1 tbsp fresh lemon juice
  • 2 cups dates (pitted, about 28)
  • ½ tsp ground ginger or fresh ginger
  • 1 whole vanilla bean (minced) or 1 tsp vanilla extract
  • 2 tbsp coconut butter

Instructions

  1. Mix lemon zest, shredded coconut, and sea salt in a shallow bowl and set aside.
  2. In a food processor, combine the remaining ingredients and pulse until a ball forms, adding water if necessary.
  3. Roll the mixture into 25 to 30 small balls and coat them in the lemon zest mixture.
  4. Place the balls on a plate and freeze for 5 minutes to harden, then transfer to an airtight container for storage.
