Lemon-Ginger Coconut Date Balls

Instructions
- Mix lemon zest, shredded coconut, and sea salt in a shallow bowl and set aside.
- In a food processor, combine the remaining ingredients and pulse until a ball forms, adding water if necessary.
- Roll the mixture into 25 to 30 small balls and coat them in the lemon zest mixture.
- Place the balls on a plate and freeze for 5 minutes to harden, then transfer to an airtight container for storage.
