Instructions
- Preheat the oven to 350°F and prepare baking sheets with parchment paper.
- In a mixer, cream together the butter, granulated sugar, and brown sugar.
- Add the peanut butter, egg, and vanilla, mixing until light and fluffy.
- Incorporate the flour, baking soda, and salt until a dough forms.
- Roll the dough into 24-30 balls and optionally roll in sugar before placing on baking sheets.
- Bake for 9-12 minutes until puffed and lightly golden.
- Press a chocolate kiss into the center of each cookie immediately after removing from the oven.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
