Instructions
- 1. Preheat the oven to 375°F and prepare cookie sheets with parchment paper.
- 2. Mix ground flax and water in a small bowl to create a flax egg and set aside.
- 3. In a large bowl, cream together peanut butter, vegan butter, and both sugars until light and fluffy.
- 4. Add the flax egg and vanilla to the mixture and combine well.
- 5. Gradually add the flour, baking soda, and salt, mixing until just combined.
- 6. Roll the dough into smooth 1-inch balls and place them on the prepared cookie sheets.
- 7. Bake for about 8 minutes, then press a chocolate kiss into the center of each cookie.
- 8. Return to the oven and bake for an additional minute, then cool on a rack.
