Ingredients

The cookie dough

  • 1 tbsp ground flax
  • 3 tbsp water
  • ½ cup natural salted peanut butter
  • ½ cup vegan butter, softened
  • ½ cup organic cane sugar
  • ¼ cup coconut sugar
  • 1 tsp vanilla extract
  • 1 cup white whole wheat flour
  • ¾ tsp baking soda
  • ¼ tsp fine sea salt

Instructions

  1. 1. Preheat the oven to 375°F and prepare cookie sheets with parchment paper.
  2. 2. Mix ground flax and water in a small bowl to create a flax egg and set aside.
  3. 3. In a large bowl, cream together peanut butter, vegan butter, and both sugars until light and fluffy.
  4. 4. Add the flax egg and vanilla to the mixture and combine well.
  5. 5. Gradually add the flour, baking soda, and salt, mixing until just combined.
  6. 6. Roll the dough into smooth 1-inch balls and place them on the prepared cookie sheets.
  7. 7. Bake for about 8 minutes, then press a chocolate kiss into the center of each cookie.
  8. 8. Return to the oven and bake for an additional minute, then cool on a rack.
