Instructions
- Preheat the oven to 375°F and line baking sheets with parchment paper or silicone mats.
- In a small bowl, whisk together the flour, baking soda, and salt.
- In a stand mixer, cream together the butter, granulated sugar, and brown sugar until well combined.
- Mix in the peanut butter, then add the egg and vanilla, blending well.
- Gradually add the flour mixture and mix until combined; chill the dough if too sticky.
- Scoop out even tablespoons of dough and shape into balls, rolling them in sugar to coat.
- Place the balls on the baking sheets, spacing them 1½ inches apart, and bake for 7-9 minutes until nearly set.
- Unwrap the chocolates while cookies are baking.
- Immediately after baking, gently press a chocolate into the center of each cookie.
- Transfer the cookies to a wire rack and refrigerate for 5-10 minutes to let the chocolate set.
