Instructions
- Brown the butter and let it cool.
- Whisk together the dry ingredients in a separate bowl.
- Beat the sugars into the cooled butter, then add the egg, peanut butter, and vanilla.
- Mix in the dry ingredients until just combined, then refrigerate the dough for at least 4 hours.
- Preheat the oven and prepare baking sheets.
- Roll the dough into balls, coat in sugar, and place on the baking sheet.
- Bake until the tops are barely cracked, then cool briefly.
- Press a chocolate kiss into the center of each cookie and let cool completely.
