Ingredients

The cookie dough

  • ½ cup European style unsalted butter
  • ½ cup all-purpose flour
  • ½ cup white whole wheat flour
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ¾ cup granulated sugar
  • ½ cup lightly packed dark brown sugar
  • 1 large egg
  • ¾ cup creamy peanut butter
  • 1 ½ teaspoons pure vanilla extract

The topping

  • 24 pieces chocolate kiss candies

Instructions

  1. Brown the butter and let it cool.
  2. Whisk together the dry ingredients in a separate bowl.
  3. Beat the sugars into the cooled butter, then add the egg, peanut butter, and vanilla.
  4. Mix in the dry ingredients until just combined, then refrigerate the dough for at least 4 hours.
  5. Preheat the oven and prepare baking sheets.
  6. Roll the dough into balls, coat in sugar, and place on the baking sheet.
  7. Bake until the tops are barely cracked, then cool briefly.
  8. Press a chocolate kiss into the center of each cookie and let cool completely.
