Ingredients

The cookie

  • cup natural peanut butter
  • ¼ cup coconut oil, melted
  • cup maple syrup
  • 1 tsp vanilla
  • 2 cups almond flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 14 pieces Hershey Kisses

The chocolate center (optional)

  • 2 Tbsp peanut butter
  • 1 tsp coconut oil
  • ½ cup chocolate chips
  • ¼ cup cocoa powder

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a small bowl, mix peanut butter, coconut oil, maple syrup, and vanilla until combined.
  3. In a large bowl, mix almond flour, baking soda, and salt.
  4. Add the wet ingredients to the dry ingredients and stir until fully mixed.
  5. Scoop out dough and roll it into balls.
  6. Bake for 10-12 minutes or until slightly golden brown, pressing down the centers after removing from the oven.
  7. Let the cookies cool on a wire rack.
  8. To make the chocolate center, melt peanut butter, coconut oil, and chocolate chips in the microwave, stirring until smooth.
  9. Stir in cocoa powder and pour the mixture into a ziplock bag.
  10. Once cookies are completely cooled, pipe the chocolate mixture into the centers to resemble Hershey Kisses.
  11. Let the chocolate set before storing in an airtight container.
