Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a small bowl, mix peanut butter, coconut oil, maple syrup, and vanilla until combined.
- In a large bowl, mix almond flour, baking soda, and salt.
- Add the wet ingredients to the dry ingredients and stir until fully mixed.
- Scoop out dough and roll it into balls.
- Bake for 10-12 minutes or until slightly golden brown, pressing down the centers after removing from the oven.
- Let the cookies cool on a wire rack.
- To make the chocolate center, melt peanut butter, coconut oil, and chocolate chips in the microwave, stirring until smooth.
- Stir in cocoa powder and pour the mixture into a ziplock bag.
- Once cookies are completely cooled, pipe the chocolate mixture into the centers to resemble Hershey Kisses.
- Let the chocolate set before storing in an airtight container.
