Ingredients

Salad

  • 200 g baby spinach leaves
  • 450 g bean sprouts
  • 3 small oranges
  • ½ unit orange bell pepper
  • 150 g unsalted cashews

Dressing

  • 3 small oranges (juice)
  • 15 g fresh ginger
  • 1 tbsp tamari sauce
  • ½ tsp salt
  • 1 clove garlic
  • 1 tsp liquid honey
  • ¼ tsp sambal oelek

Instructions

  1. Supreme the oranges over a bowl to catch the juice and squeeze out the remaining juice.
  2. Transfer the supremes to a large bowl, cutting them in half if necessary.
  3. Add bean sprouts, bell peppers, and spinach to the bowl with the orange supremes, then top with cashews.
  4. Combine the dressing ingredients with the orange juice and whisk or blend.
  5. Pour the dressing over the salad and stir to combine before serving.
