Ingredients

Burger Buns

  • 1 tablespoon unsalted butter
  • 6 pieces potato buns

Burger Patties

  • 2 pounds ground beef (85%/15%)
  • to taste Kosher salt
  • to taste freshly ground pepper
  • 2 teaspoons neutral oil (vegetable or avocado)

Burger Assembly

  • 1 slice American cheese
  • to taste mayonnaise
  • 2 pieces roma or vine ripe tomatoes
  • 1 head butter lettuce
  • to taste Kosher salt
  • 2 pieces dill pickles (sliced)

Instructions

  1. Toast the potato bun halves in a pan with melted butter until golden brown.
  2. Portion the ground beef into loosely packed 4-ounce piles and season with salt and pepper.
  3. Heat a cast iron skillet and add oil, then add two beef piles and smash them flat.
  4. Cook until the edges are brown, then flip and cook for another minute or two.
  5. Transfer cooked patties to a warm oven and top each with a slice of American cheese until melted.
  6. Assemble the burgers with mayonnaise, patties, pickles, tomatoes, and lettuce on the toasted buns.
