Black Bean Smash Burger

Ingredients

The burger mixture

  • 1 cup mayonnaise
  • 2 Tbsp. adobo sauce from chipotle chiles in adobo
  • 2 Tbsp. vegetable oil
  • 1 medium red onion, finely chopped
  • tsp. Diamond Crystal kosher salt
  • 3 cloves garlic, finely chopped
  • 1 tsp. ground cumin
  • ½ tsp. ground coriander
  • 6 oz. pepper Jack cheese, sliced
  • 15 oz. can black beans, rinsed
  • 1 large egg, beaten
  • 2 chipotle chiles in adobo chopped
  • ½ cup plain dried breadcrumbs

The buns and toppings

  • 4 brioche buns split
  • Unsalted butter room temperature for buns
  • Shredded iceberg lettuce for serving
  • Sliced red onion for serving
  • Sliced heirloom or beefsteak tomato for serving

Instructions

  1. Combine mayonnaise and adobo sauce in a bowl and chill.
  2. Heat vegetable oil in a skillet, add onion and salt, and cook until softened. Add garlic and spices, then cool.
  3. Slice and grate the cheese.
  4. Mash black beans in a bowl, then mix in cheese, egg, chiles, breadcrumbs, and onion mixture.
  5. Form the bean mixture into balls and smash them into patties.
  6. Butter the buns and toast them in the skillet until golden.
  7. Cook the patties in the skillet until browned, adding cheese on top to melt.
  8. Assemble the burgers with mayo, lettuce, patties, onion, and tomato.
