Ingredients

Chipotle Mayonnaise

  • 3 ½ tbsp light mayonnaise
  • 1 tbsp canned chipotle in adobo sauce

Black Bean Burgers

  • 16 oz can black beans
  • ½ each red bell pepper
  • ½ cup chopped scallions
  • 3 tbsp chopped cilantro
  • 3 cloves garlic
  • 1 jumbo egg
  • 1 tbsp cumin
  • ¼ to ½ tsp kosher salt
  • 1 tsp hot sauce
  • ½ cup quick oats
  • 4 each whole wheat buns
  • 1 small hass avocado

Instructions

  1. Combine mayonnaise and chipotle, then set aside.
  2. Dry the beans thoroughly after rinsing to prevent sticking.
  3. Mash the beans in a bowl until thick and pasty.
  4. In a food processor, finely chop the bell pepper, cilantro, scallions, and garlic.
  5. Add oats, egg, and spices to the food processor and blend.
  6. Stir the mixture into the mashed beans.
  7. Divide the mixture into four patties and place them on wax paper.
  8. If the mixture is too wet, chill in the refrigerator for 30 minutes or add more oats.
  9. Freeze the patties for at least 2 hours before cooking.
  10. Cook the frozen burgers in a skillet for about 7 minutes on each side, or grill for 7-8 minutes per side.
