Ingredients

The Burgers

  • 2 lbs ground chuck roast (80% lean, 20% fat)
  • ½ stick butter
  • 1 onion finely chopped
  • 1 Tbsp. kosher sea salt
  • ½ Tbsp. coarsely ground pepper

The Secret Sauce

  • ½ cup mayo
  • 2 Tbsp. ketchup
  • 1 Tbsp. mustard
  • 1 Tbsp. pickle relish
  • 1 dash onion powder
  • 1 dash smoked paprika

Instructions

  1. Mix the secret sauce ingredients and refrigerate until ready to use.
  2. Form the ground beef into rough balls without compressing them.
  3. Heat the grill to 400 degrees on medium-high direct heat.
  4. Place a cast iron skillet on the grill and let it heat up.
  5. Melt butter in the skillet and sauté the onions until translucent, then set aside.
  6. Add more butter, place burgers on the skillet, and flatten them to ½-inch thick.
  7. Sprinkle the burgers with salt and pepper, and flip when crispy edges form.
  8. Add cheese and cook until both sides are crispy.
  9. Assemble the burgers with secret sauce, a patty, grilled onions, and any additional toppings.
