Slow Cooker Salisbury Steak with Mushrooms and Gravy

Instructions
- Combine ground beef, breadcrumbs, onion, eggs, salt, and pepper in a bowl and mix well.
- Divide the mixture into 8 equal portions and shape into oval patties about ½ inch thick.
- Heat a skillet to medium-high heat and sear the patties for about 3 minutes on each side.
- Place half of the mushrooms and onions in the bottom of the slow cooker.
- Add the seared patties on top of the vegetables, then add the remaining mushrooms and onions.
- In a bowl, whisk together beef broth, gravy mix, and mustard, then pour over the patties.
- Cover and cook on low for 4 to 5 hours until cooked through.
- Remove patties and tent with foil to keep warm.
- Whisk cornstarch with ¼ cup of water until smooth and add to the gravy, stirring to combine.
- Cook on high for 5 minutes until the gravy thickens and serve the patties with the gravy.
