Slow Cooker Salisbury Steak with Mushrooms and Gravy

Ingredients

Beef Patties

  • 2 pounds ground beef
  • cup breadcrumbs
  • ½ cup diced yellow onion
  • 2 large eggs
  • 2 teaspoons sea salt
  • ½ teaspoon fresh ground black pepper
  • 2 tablespoons avocado oil or other neutral oil

Vegetables

  • 8 ounces mushrooms
  • 1 sliced yellow onion

Gravy

  • 2 cups beef broth
  • 1 ounce brown gravy mix
  • 1 teaspoon yellow mustard
  • 2 tablespoons cornstarch

Instructions

  1. Combine ground beef, breadcrumbs, onion, eggs, salt, and pepper in a bowl and mix well.
  2. Divide the mixture into 8 equal portions and shape into oval patties about ½ inch thick.
  3. Heat a skillet to medium-high heat and sear the patties for about 3 minutes on each side.
  4. Place half of the mushrooms and onions in the bottom of the slow cooker.
  5. Add the seared patties on top of the vegetables, then add the remaining mushrooms and onions.
  6. In a bowl, whisk together beef broth, gravy mix, and mustard, then pour over the patties.
  7. Cover and cook on low for 4 to 5 hours until cooked through.
  8. Remove patties and tent with foil to keep warm.
  9. Whisk cornstarch with ¼ cup of water until smooth and add to the gravy, stirring to combine.
  10. Cook on high for 5 minutes until the gravy thickens and serve the patties with the gravy.
