Ingredients

The Salisbury Steak

  • ½ medium onion, grated
  • cup panko breadcrumbs
  • 1 lb lean ground beef
  • 1 clove garlic, finely minced
  • 1 large egg
  • 2 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon spicy deli mustard

The Mushroom Gravy

  • 1 tablespoon vegetable oil
  • 2 cloves garlic, finely minced
  • 2 tablespoon shallots, finely chopped
  • 8 ounces mushrooms, sliced
  • 2 tablespoon unsalted butter
  • 3 tablespoon all-purpose flour
  • 2 cups beef broth
  • 1 cup water
  • 2 teaspoon spicy deli mustard
  • 2 teaspoon Worcestershire sauce
  • to taste sea salt and black pepper

Instructions

  1. Soak the breadcrumbs in a bowl with grated onion juice.
  2. Mix the remaining Salisbury Steak ingredients into the bowl until combined and sticky.
  3. Divide the mixture into 8 oval patties about ¾ inch thick.
  4. Heat oil in a skillet over medium-high heat and brown the patties on both sides.
  5. Set the browned patties aside in a baking dish.
  6. In the same skillet, sauté mushrooms, onion, and garlic until partially cooked.
  7. Add butter and flour to the skillet, stirring to form a roux.
  8. Gradually add beef broth while stirring to keep the gravy smooth.
  9. Mix in mustard, Worcestershire sauce, salt, and pepper.
  10. Pour the gravy over the patties, cover with foil, and bake at 350°F for 30 minutes.
