Mushroom and Shallot Salisbury Steak

Ingredients

The patties

  • ¾ cup panko breadcrumbs
  • 1 Tbsp. Worcestershire sauce
  • 2 tsp. Worcestershire sauce
  • 5 medium shallots
  • 1 large egg
  • 1 lb. ground beef
  • 5 cloves garlic
  • 3 tsp. mustard powder
  • tsp. kosher salt
  • tsp. freshly ground pepper

The sauce

  • 2 Tbsp. extra-virgin olive oil
  • 4 Tbsp. unsalted butter
  • 1 lb. crimini mushrooms
  • 3 Tbsp. all-purpose flour
  • 3 cups low-sodium chicken broth
  • 1 Juice of lemon
  • 5 sprigs thyme
  • ¼ cup coarsely chopped parsley

Instructions

  1. Combine panko breadcrumbs, Worcestershire sauce, and finely chopped shallots in a bowl and let sit for 5 minutes.
  2. Add egg, ground beef, grated garlic, mustard powder, kosher salt, and pepper to the panko mixture and mix well. Form into 4 oval patties.
  3. Heat olive oil in a skillet over medium heat and cook patties until golden brown, about 5–7 minutes per side. Transfer to a plate.
  4. In the same skillet, melt butter and cook sliced shallots until softened. Add mushrooms and salt, cooking until mushrooms are browned.
  5. Stir in flour to coat shallots and mushrooms, then gradually add chicken broth, lemon juice, thyme, mustard powder, and pepper. Simmer until sauce is reduced.
  6. Add the patties to the sauce and simmer until heated through and sauce thickens. Serve topped with chopped parsley.
