Ingredients

The patties

  • ½ cup milk
  • ½ cup bread crumbs
  • 1 pound ground beef
  • to taste salt
  • to taste black pepper
  • 4 tablespoons butter

The gravy

  • 1 medium onion
  • 1 pound mushrooms
  • 1 tablespoon tomato paste
  • 2 tablespoons all-purpose flour
  • 1 teaspoon fresh thyme
  • cups beef broth
  • ¼ cup red wine

Instructions

  1. Prepare a plate lined with parchment or wax paper.
  2. In a bowl, mix milk and bread crumbs, then add ground beef and season with salt and pepper, kneading until combined.
  3. Shape the mixture into four oval patties and chill for at least 30 minutes.
  4. In a skillet, melt 1 tablespoon of butter and cook the patties until browned on both sides, then set aside.
  5. In the same skillet, add the remaining butter and onions, cooking until softened.
  6. Add mushrooms, thyme, and salt, cooking until the liquid evaporates.
  7. Stir in tomato paste and flour, cooking until browned.
  8. Gradually add beef broth and red wine, bringing to a simmer.
  9. Return the patties to the skillet, cover, and simmer until cooked through.
