Ingredients

Dough

  • 1 ½ cups Wholesome Yum Blanched Almond Flour
  • ¼ cup Besti Monk Fruit Allulose Blend
  • 1 tbsp Baking powder
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 2 ½ cups Mozzarella cheese (shredded)
  • 2 oz Cream cheese (cubed)

Filling

  • ¼ cup Unsalted butter (melted)
  • ½ cup Besti Brown Monk Fruit Allulose Blend
  • 2 tbsp Cinnamon

Icing

  • cup Besti Powdered Monk Fruit Allulose Blend
  • 1-2 tbsp Heavy cream

Instructions

  1. Prepare the dough by pulsing almond flour, sweetener, baking powder, eggs, and vanilla in a food processor until smooth.
  2. Melt mozzarella and cream cheese together until smooth, then add to the food processor and pulse to form a dough.
  3. Refrigerate the dough for 60 minutes to make it less sticky.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out the dough between two pieces of parchment paper into a rectangle.
  6. Brush the rolled dough with melted butter and sprinkle with a mixture of brown sweetener and cinnamon.
  7. Roll the dough tightly into a log and slice it into 1-inch thick pinwheels.
  8. Place the slices in a baking dish and bake for about 25 minutes until golden.
  9. Prepare the icing by whisking together powdered sweetener and heavy cream, then drizzle over the cooled rolls.
