Instructions
- Prepare the dough by pulsing almond flour, sweetener, baking powder, eggs, and vanilla in a food processor until smooth.
- Melt mozzarella and cream cheese together until smooth, then add to the food processor and pulse to form a dough.
- Refrigerate the dough for 60 minutes to make it less sticky.
- Preheat the oven to 375°F (190°C).
- Roll out the dough between two pieces of parchment paper into a rectangle.
- Brush the rolled dough with melted butter and sprinkle with a mixture of brown sweetener and cinnamon.
- Roll the dough tightly into a log and slice it into 1-inch thick pinwheels.
- Place the slices in a baking dish and bake for about 25 minutes until golden.
- Prepare the icing by whisking together powdered sweetener and heavy cream, then drizzle over the cooled rolls.
