Ingredients

The dough

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 2 tablespoons erythritol or any granulated sweetener
  • 3 cups shredded mozzarella cheese, low moisture
  • 2 ounces cream cheese
  • 2 large eggs

The filling

  • ¼ cup butter, melted
  • cup brown sugar substitute
  • 1 tablespoon cinnamon

The frosting

  • 4 ounces cream cheese
  • ½ cup butter, softened
  • 2 cups powdered sugar substitute
  • 1-2 tablespoons milk (optional)

Instructions

  1. Preheat the oven to 180C/350F and line a 9 x 13-inch baking dish with parchment paper.
  2. In a small bowl, whisk together almond flour, baking powder, and sweetener.
  3. In a microwave-safe bowl, combine mozzarella cheese and cream cheese, microwaving until melted, then whisk until smooth.
  4. Transfer melted cheese to a food processor, add eggs and dry ingredients, and blend until smooth.
  5. Roll out the dough into a rectangle, brush with melted butter, and sprinkle with brown sugar substitute and cinnamon.
  6. Roll the dough into a log and slice into 12 rolls.
  7. Place rolls in the baking dish and bake for 20-25 minutes until golden.
  8. Prepare the frosting by whisking together cream cheese, butter, and powdered sugar, adding milk as needed for consistency.
  9. Frost the warm cinnamon rolls and serve immediately.
