Instructions
- Preheat the oven to 180C/350F and line a 9 x 13-inch baking dish with parchment paper.
- In a small bowl, whisk together almond flour, baking powder, and sweetener.
- In a microwave-safe bowl, combine mozzarella cheese and cream cheese, microwaving until melted, then whisk until smooth.
- Transfer melted cheese to a food processor, add eggs and dry ingredients, and blend until smooth.
- Roll out the dough into a rectangle, brush with melted butter, and sprinkle with brown sugar substitute and cinnamon.
- Roll the dough into a log and slice into 12 rolls.
- Place rolls in the baking dish and bake for 20-25 minutes until golden.
- Prepare the frosting by whisking together cream cheese, butter, and powdered sugar, adding milk as needed for consistency.
- Frost the warm cinnamon rolls and serve immediately.
