Ingredients

Cream Cheese Filling

  • 4 oz Cream cheese (softened)
  • 3 tbsp Besti Powdered Monk Fruit Allulose Blend
  • ½ tsp Vanilla extract

Muffin Base

  • 5 tbsp Unsalted butter (softened)
  • ½ cup Besti Monk Fruit Allulose Blend
  • 3 large Eggs (at room temperature)
  • 3 tbsp Heavy cream (at room temperature)
  • 1 tsp Vanilla extract
  • 2 ½ cups Wholesome Yum Blanched Almond Flour
  • 2 tsp Baking powder
  • ¼ tsp Sea salt

Streusel

  • 1 cup Wholesome Yum Blanched Almond Flour
  • ½ cup Besti Brown Monk Fruit Allulose Blend
  • 1 tbsp Cinnamon
  • tsp Sea salt
  • 2 ½ tbsp Unsalted butter (melted)
  • ¼ tsp Vanilla extract

Instructions

  1. Prepare the cream cheese filling by mixing cream cheese, sweetener, and vanilla until smooth, then freeze into a log.
  2. Make the muffin batter by beating softened butter and sweetener until fluffy, then add eggs, cream, and vanilla, followed by dry ingredients.
  3. Prepare the streusel by mixing almond flour, brown sweetener, cinnamon, and salt, then combine with melted butter.
  4. Preheat the oven and line a muffin tin with liners.
  5. Fold some streusel into the muffin batter, then fill muffin cups halfway.
  6. Slice the frozen cream cheese log and place a slice in each muffin cup, then top with remaining batter and streusel.
  7. Bake until golden and a toothpick comes out clean.
