Instructions
- Prepare the cream cheese filling by mixing cream cheese, sweetener, and vanilla until smooth, then freeze into a log.
- Make the muffin batter by beating softened butter and sweetener until fluffy, then add eggs, cream, and vanilla, followed by dry ingredients.
- Prepare the streusel by mixing almond flour, brown sweetener, cinnamon, and salt, then combine with melted butter.
- Preheat the oven and line a muffin tin with liners.
- Fold some streusel into the muffin batter, then fill muffin cups halfway.
- Slice the frozen cream cheese log and place a slice in each muffin cup, then top with remaining batter and streusel.
- Bake until golden and a toothpick comes out clean.
