Instructions
- Preheat the oven to 350°F and prepare a muffin tin with liners.
- In a bowl, whisk together coconut flour, sweetener, baking powder, salt, cinnamon, and xanthan gum.
- In another bowl, cream together the butter, cream cheese, and vanilla until fluffy.
- Add one egg at a time, mixing well after each addition, followed by a third of the dry ingredients.
- Continue adding eggs and dry ingredients alternately, mixing until fluffy.
- Incorporate the heavy cream and gently fold in the blueberries.
- Transfer the batter into muffin liners using a zip-loc bag for easy filling.
- Sprinkle the tops with additional sweetener.
- Bake for 5 minutes at 400°F, then reduce to 350°F and bake for an additional 20-25 minutes.
- Let cool slightly before removing from the pan.
