Instructions
- Cook the bacon in a skillet over medium heat until crisp, then remove and set aside.
- Drain excess grease from the pan, leaving about a tablespoon.
- Melt the butter in the skillet with the bacon drippings, then add flour and stir to thicken.
- Pour in the heavy cream (or half and half), sweetener, Creole seasoning, salt, and pepper, and stir to combine.
- Add the corn and cooked bacon to the mixture, cooking for 3-4 minutes until thickened, adjusting seasoning as needed.
