Ingredients

The base

  • 3 slices bacon
  • 2 tablespoons unsalted butter
  • 2 tablespoons all purpose flour
  • 1 cup half and half or heavy whipping cream
  • 1-2 tablespoons sweetener or sugar
  • 1 teaspoon Creole Seasoning
  • to taste salt

The corn

  • 28 oz corn

Instructions

  1. Cook the bacon in a skillet over medium heat until crisp, then remove and set aside.
  2. Drain excess grease from the pan, leaving about a tablespoon.
  3. Melt the butter in the skillet with the bacon drippings, then add flour and stir to thicken.
  4. Pour in the heavy cream (or half and half), sweetener, Creole seasoning, salt, and pepper, and stir to combine.
  5. Add the corn and cooked bacon to the mixture, cooking for 3-4 minutes until thickened, adjusting seasoning as needed.
