Instructions
- Separate the egg and place the yolk in a small saucepot, saving the whites for another use.
- Add water and lemon juice to the pot with the yolk and whisk until smooth without heat.
- Cut butter into small pieces and add to the pot with the yolk mixture.
- Place the pot over medium-low heat and continuously whisk as the mixture heats.
- Whisk until the butter melts and the sauce begins to froth, then thickens to a gravy-like consistency.
- Once thickened, remove from heat and season with salt and cayenne.
- Drizzle the sauce over your favorite dishes.
