Hollandaise Sauce

Ingredients

  • 3 pieces egg yolks
  • 1 tablespoon water
  • 1 teaspoon lemon juice
  • 8 ounces clarified butter
  • to taste salt
  • to taste Tabasco sauce or cayenne pepper

Instructions

  1. 1. Set a bowl over a pot of simmering water, ensuring the water doesn't touch the bowl.
  2. 2. Add egg yolks to the bowl and whisk constantly until thickened.
  3. 3. Remove from heat and stir in lemon juice.
  4. 4. Gradually whisk in warmed clarified butter, starting with a few drops at a time.
  5. 5. Once emulsified, add the remaining butter more quickly.
  6. 6. Taste and adjust seasoning with salt and hot sauce if desired.
  7. 7. Use immediately or keep warm for up to 1 hour, whisking in warm water if it thickens too much.
