Instructions
- 1. Set a bowl over a pot of simmering water, ensuring the water doesn't touch the bowl.
- 2. Add egg yolks to the bowl and whisk constantly until thickened.
- 3. Remove from heat and stir in lemon juice.
- 4. Gradually whisk in warmed clarified butter, starting with a few drops at a time.
- 5. Once emulsified, add the remaining butter more quickly.
- 6. Taste and adjust seasoning with salt and hot sauce if desired.
- 7. Use immediately or keep warm for up to 1 hour, whisking in warm water if it thickens too much.
