Instructions
- Add the egg yolks to a blender and secure the lid, removing the middle piece.
- Melt the butter in a small frying pan over medium heat until it bubbles and stops foaming.
- Turn the blender on low and slowly pour the hot butter into the blender, increasing speed as the sauce emulsifies.
- Add the lemon juice and pepper, then blend at a higher speed, scraping down the sides as needed.
- Let the sauce sit in the blender until ready to serve.
