Ingredients

  • 3 large egg yolks
  • 4 ounces salted butter or ghee
  • 1-3 teaspoons fresh lemon juice or vinegar or dry white wine
  • ΒΌ teaspoon cayenne or white pepper

Instructions

  1. Add the egg yolks to a blender and secure the lid, removing the middle piece.
  2. Melt the butter in a small frying pan over medium heat until it bubbles and stops foaming.
  3. Turn the blender on low and slowly pour the hot butter into the blender, increasing speed as the sauce emulsifies.
  4. Add the lemon juice and pepper, then blend at a higher speed, scraping down the sides as needed.
  5. Let the sauce sit in the blender until ready to serve.
