Ingredients

  • ¾ cup butter
  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • ½ teaspoon Kosher salt
  • 1 pinch cayenne

Instructions

  1. Melt the butter in a small saucepan over medium-low heat and let it cool for 2 minutes.
  2. Add the egg yolks, lemon juice, salt, and cayenne to a blender and blend on medium-high speed for 10 seconds.
  3. Reduce the blender speed to medium-low and slowly stream in about half of the melted butter while blending.
  4. Stop the blender to check the consistency, then add the remaining butter until the desired consistency is reached.
  5. Taste the sauce and adjust with more lemon juice, salt, or cayenne if needed.
  6. Serve immediately.
