Instructions
- Melt the butter in a small saucepan over medium-low heat and let it cool for 2 minutes.
- Add the egg yolks, lemon juice, salt, and cayenne to a blender and blend on medium-high speed for 10 seconds.
- Reduce the blender speed to medium-low and slowly stream in about half of the melted butter while blending.
- Stop the blender to check the consistency, then add the remaining butter until the desired consistency is reached.
- Taste the sauce and adjust with more lemon juice, salt, or cayenne if needed.
- Serve immediately.
