Ingredients

  • 3 large egg yolks
  • 4 ounces salted butter or ghee
  • 1-3 teaspoons fresh lemon juice or vinegar or dry white wine
  • ΒΌ teaspoon cayenne or white pepper

Instructions

  1. Add the egg yolks to a blender and cover, removing the middle piece.
  2. Preheat a small frying pan over medium heat and melt the butter until it bubbles.
  3. Slowly pour the hot butter into the blender while it runs on low, increasing speed as the sauce emulsifies.
  4. Add the lemon juice and pepper, then blend at a higher speed and scrape down the sides.
  5. Let the sauce sit in the blender until ready to serve.
